Dinner Surprise

I always enjoy it when a recipe surprises me (for the better). I have tried Mexican-style casseroles in the past and they have always been a disappointment. This Beef and Bean Taco Casserole turned out to be a real winner.

I used fresh local (CSA) ingredients for as much as I could (tomatoes, peppers, and ingredients for the salsa which I did homemade), and the beef came from our grass-fed half steer.  The end result was surprisingly yummy and left us with barely enough leftover for a Sunday snack.  Success!Beef and Bean Taco Casserole.  Tried 09/20/13.  I didn't have great expectations for this casserole, but it actually turned out to be quite yummy (as evidenced by the less-than-one-portion sized leftover).  I think this dish could easily be made ahead of time and then just thrown in the oven to be heated through.  It would also be a good take-along dish.  I used tomatoes, peppers, and beef from our local farm/CSA, and homemade salsa.
